Limerick’s sporting and business community came out in force last Wednesday 25 evening for a very special event to celebrate the return of the Special Olympics Ireland Games to Limerick next Summer, which will see up to 12,000 people coming to the city over four days from June 12.
The evening fundraiser took place at the Cornstore Restaurant and just some of the sporting guests attending the event included Munster Rugby’s Felix Jones, Damien Varley and team manager Niall O’Donovan, Limerick FC’s Sam Oji, Jason Hughes and Carel Tiofack, and Limerick Camogie manager Joe Quaid.
The evening also featured recent rugby retiree and Special Olympics Ambassador David Wallace as MC, and another rugby legend as guest speaker in the form of Keith Wood who sits on the Council of Patrons of the Special Olympics.
There were many familiar faces spotted at the fundraiser as Limerick’s local business community also showed out in force. Limerick Hoteliers Group, LCBA, Thomond Asset Management, Specsavers, Bluebird Care, the Shannon Region Conference and Sports Bureau, and Fine Wines were just some of the many business groups lending their support to the fundraising event.
The evening featured a superb three-course gourmet menu prepared by the Cornstore chefs with a specially created Olympic themed dessert plate including a miniature Olympic wafer torch with orange and raspberry mousse flame!
Wines supplied by Fine Wines accompanied the meal and Fine Wines chairman and philanthropist Ralph Parkes received special mention on the evening for his ongoing personal contribution behind the scenes to Special Olympics Ireland.
