IT’s back to school time and I just thought I’d include a little treat for those that might want to put a smile on all the kids faces – big or small.
What can you say about marshmallows only they are delightful puffs of sugar and a joy to make. These ones have a burst of fruit so as to make you feel somewhat at ease about the little treats.
They’re dead easy to make so why not give it a try – they even toast well too.
WHAT YOU NEED
65g of water
200g sugar (use icing or castor)
10g gelatine or 6 sheets (bloomed in water to soften)
65g fruit puree (strawberry, peach, banana)
WHAT TO DO
In a heavy based small pot, bring the water and the sugar to a boil while constantly stirring the mixture – if you have a sugar thermometer, bring it to 110 deg and remove from the heat. If not bring the mixture to the boil gradually while the sugar dissolves and leave boil for 30 seconds.
Remove from the heat and add the gelatine sheets and the pureed fruit of your choice.
Allow this to dissolve and transfer the entire mixture to a mixer and whip on high speed for 10 minutes.
Meantime, grease a pan and dust with a generous amount of icing sugar.
Transfer the whipped marshmallow mix to the pan and spread out evenly and allow to set – it should take an hour or so. Invert the dish on to a well powdered surface with icing sugar and cornflour.
Cut the marshmallows into bite size pieces and dust again with a mix of cornflour and icing sugar and enjoy them.
