Thornton to host workshop for region

NOT content with hosting one superstar chef, Thomond Park will play host to second culinary superstar this September, but this even will be geared towards industry professionals in the region.

Award-winning Irish celebrity chef Kevin Thornton will provide a free workshop for catering operators and chefs in Limerick and Clare at Thomond Park Stadium on Tuesday September 21st at 2pm

as part of the “Less Food Waste More Profit Workshop”, which will be hosted by the Limerick Clare Kerry Regional Waste Management Office (RWMO),

The free event will feature guidance on the newly introduced Waste Management (Food Waste) Regulations and how businesses can segregate waste more effectively and ensure compliance.

Kevin Thornton is the owner of Thornton’s Restaurant in Dublin’s city centre, which has received two Michelin stars in the the past and has always been to forefront of culinary design and creativity. Kevin is also the author of the book “Food for Life” and has participated in numerous television and radio programmes.

According to Pauline McDonagh, Local Authority Prevention Demonstration (LAPD) Programme Coordinator, RWMO: “Kevin Thornton will use his vast experience in the catering sector to demonstrate the benefits for business and the environment by segregating food waste more effectively. The upcoming workshop provides an excellent opportunity for Clare and Limerick’s catering operators and chefs to find out more about the recently enacted Food Waste Regulations and in doing so reduce the level of waste being to landfill from their commercial premises.”

Ms. McDonagh explained: “The Waste Management (Food Waste) Regulations require that commercial premises segregate and separately store all food waste arising on their premises for separate collection by an authorised waste collector.  The regulations are designed to promote the segregation and beneficial use of food arising from the commercial sector and to reduce the amount of biodegradable waste going to landfill.”

The Waste Management (Food Waste) Regulations, which came into force on 1st July 2010, apply to all businesses preparing food on their premises.  Further information on the regulations is available from www.foodwaste.ie.

Admission to the “Less Food Waste More Profit Workshop” is free, but prior booking is essential.
