Cappuccino Mousse

When you are inviting people round for a meal, the secret to success lies in the preparation. And this recipe is perfect for when you are entertaining – it can be made well in advance, it looks impressive and it tastes delicious! The mousse is rich, but light and needs only to be served in small portions. A perfect way to finish off your game main course.

WHAT YOU NEED

100ml milk

2 tsp instant coffee granules

200g milk chocolate

3 egg whites

75g vanilla, fruit or plain sugar

300ml double cream

50g white chocolate, finely grated

WHAT TO DO

Place the milk and coffee in a small saucepan and heat through. Break the chocolate into a basin and heat over a pan of simmering water to melt. Allow to cool.

Beat the egg whites until stiff and then beat in the sugar. In a large bowl whip the cream until stiff then add the coffee liquid, chocolate and egg whites, mix thoroughly.

Divide the mixture into 6 – 8 ramekins or coffee cups. Sprinkle with the grated white chocolate. Place in the refrigerator to set then serve.
