WHAT YOU NEED
175g chocolate with a high cocoa content
60g milk chocolate
3/4 cup unsalted butter
1 1/2 cups sugar
2 1/2 tsp vanilla extract
4 eggs
1 cup plain flour
1 tbsp instant espresso powder
1/4 tsp salt
3/4 cup chocolate chips
WHAT TO DO
Preheat oven to 350 degF / 180 deg C. Line a 13 x 9-inch (3.5L) baking pan with parchment, or grease and flour.
In a heatproof bowl over simmering water, melt chocolate and butter together. Remove from heat, add sugar and vanilla, mixing until smooth. Stir in eggs, one at a time until incorporated. Fold in flour, espresso powder and salt. Stir in chocolate chips. Spread in prepared pan. Bake for 25-30 minutes, or until set. A few crumbs should stick to tester when inserted. Remove to rack and let cool.
